The Commitment

I started the roastery with the express purpose of providing the best and freshest coffees I could find so that others could enjoy coffee as much as I do. I continue to fine tune my craft as I roast new beans from around the world.
Before I started roasting and researching the whole process, I always tried to buy coffees that were one or two days off roast. I was thinking: 'the fresher, the better!' Therefore, I conceived this as a strictly roast-to-order type of site. While it is definitely desirable to buy coffee beans that are not past their prime (stale), most specialty coffee beans benefit from a period of resting. This can range anywhere from a few days up to a few weeks, especially for light roasted beans. Thus, I envisioned roasting constantly to meet the enormous pent-up desire to buy my coffee (sarcasm).
This morphed a bit when I discovered that my desire to roast outweighed the number of actual on-line orders. This led to offering the Roasted and Ready coffees. Thus, you always have the choice of ready to brew beans or those you want to order and rest for yourself.
